We created this Strawberry Matcha Cake to strike a careful balance between freshness and depth — the bright juiciness of strawberries against the earthy, slightly bitter edge of matcha. On soft matcha sponge, we layer an airy matcha whipped cream and hand-diced fresh strawberries. We finish the exterior with strawberry infused cream, freeze-dried strawberry slices for added tang, and delicate gold flakes. It’s a cake made for those who enjoy complexity in flavour, delivered in a clean and balanced form.
